This Middle Eastern-style lamb roast makes a no-fuss, low fat Australia Day meal the whole family will enjoy.

- 2 teaspoons finely grated lemon rind

- preheat oven to 220u00b0c place the pumpkin onion zucchini and garlic in a roasting pan drizzle over lemon juice and oil season with salt and pepper

- roast in oven for 40 minutes for medium or until cooked to your liking transfer the lamb to a plate cover with foil and set aside for 5 minutes to rest
