The ingredient of Lamb Kafta
- 2 brown onions finely chopped
- 1kg lamb mince
- 1 cup fresh continental parsley leaves
- 2 teaspoons ground black pepper
- 2 teaspoons ground allspice
- 1 1 2 tablespoons olive oil
- 3 garlic cloves finely chopped
- 1 teaspoon sumac see note
The Instruction of lamb kafta
- reserve 2 tablespoons of the chopped onion and place the remaining onion in a large bowl add the lamb mince parsley pepper and allspice to the bowl and use your hands to mix until well combined
- place half the lamb mixture in the bowl of a food processor and process for 30 seconds or until well combined transfer to a large bowl and repeat with remaining lamb mixture
- divide the lamb mixture into 12 portions use your hands to shape each portion around each skewer to form a 15cm long sausage shape
- heat the oil in a medium frying pan over medium high heat add 4 lamb kaftas and cook turning occasionally for 10 minutes or until cooked through transfer to a plate and cover with foil to keep warm repeat with the remaining kaftas in 2 more batches
- place the garlic sumac and reserved onion in a small bowl and stir to combine place the lamb kaftas on a serving plate and sprinkle with the onion mixture serve immediately
