- 2 large zucchini roughly grated
- 1 1 2 cups finely chopped cooked lamb
- 1 egg lightly beaten
- 1 3 cup 50g plain flour
- salt and cracked black pepper
- ready bought pesto to serve
- lemon wedges to serve

- place the grated potato and zucchini in a large sieve and press down firmly with hands to extract as much moisture as possible see note transfer to a bowl and combine with the lamb egg flour salt and pepper
- add enough oil to a non stick frying pan to come 1cm up from the base of the pan heat over medium heat add 1 4 cupfuls of the lamb mixture to the pan and flatten to form a round cook for 3 minutes or until golden on the base then carefully turn and continue cooking for another 2 3 minutes remove and keep warm and repeat with remaining lamb mixture serve immediately with lemon wedges and pesto
