These quick greek-style succulent lamb parcels are ready in 30 minutes and are loaded with potatoes, tomatoes and crumbled fetta.

  • 4 medium red potatoes cut into 5mm thick slices
  • 400g lamb backstrap cut into 2cm pieces
  • 2 garlic cloves crushed
  • 1 tsp dried oregano leaves
  • 1 lemon halved
  • 2 tbs olive oil
  • 12 truss cherry tomatoes
  • 80g 1 u20442 cup marinated capsicum strips
  • 100g greek feta crumbled
  • 4 fresh oregano sprigs leaves picked
  • toasted olive bread to serve
  • baby rocket to serve

  • preheat oven to 200c 180c fan forced place potato and 60ml 1 4 cup water in a microwave safe bowl microwave on high for 5 minutes or until tender drain
  • meanwhile place lamb garlic dried oregano juice of 1 lemon half and 1 tbs oil in a large bowl season toss to combine
  • cut four 30 x 45cm squares of baking paper use a sharp knife to prick tomatoes divide potato among squares placing in centre top with lamb mixture reserving marinade left in bowl capsicum tomatoes feta and fresh oregano season add reserved marinade and remaining oil gather corners of paper scrunch and tie with kitchen string place on a baking tray bake for 12 15 minutes or until lamb is cooked through cut remaining lemon half into wedges serve with bread rocket and lemon wedges
